The town of Wellfleet on Cape Cod prepares for the annual Oyster Fest, which attracts 20,000 people every fall. After the summer tourist season, the town quietens down, and the oysters start to fatten up, making October the beginning of the best months to eat them.
“They feed like crazy and then have all these nutrients to store for the winter,”
says Rowan Jacobsen, author of A Geography of Oysters. This results in oysters with more natural sugars and a fuller flavor, which continues to improve through Christmas and New Year’s. Despite National Oyster Day being in August, the summer oysters are not as flavorful as those in the fall, thanks to modern refrigeration and oyster farming methods.
