Curt Lafferty, the former executive at Kansas-based Tippin’s Pies, is launching Mo Pie's first physical bakery in northern Leawood later this month. Initially, the bakery will operate as a holiday pop-up before becoming a permanent location in spring or summer 2026.
Lafferty began his career after attending the American Institute of Baking, now part of Kansas State University. He started in sales and eventually worked with Tippin’s Pies, becoming a consultant and then an executive. After roughly 20 years at Tippin’s, he developed his baking skills and founded Mo Pie in 2020.
Since its founding, Mo Pie’s products have expanded to multiple local businesses, including several Price Chopper grocery stores and farmers markets. The company ships hundreds of pies weekly across the Midwest region.
“If all goes according to plan, then Mo Pie will have two more 'pop-ups' for Valentine’s Day and Easter before opening permanently in the space,” Lafferty said.
Thanksgiving orders will be accepted soon in the new Leawood location, followed by a Christmas pop-up event December 24–26.
