Lee Murdoch has been appointed executive chef at Seaton House in St Andrews. He succeeds Mark Drummond, who served as culinary director since December last year.
Murdoch will work closely with Roy Brett, the founder chef behind the hotel's Ondine Oyster & Grill and head of culinary UK and Europe for Valor Hospitality, which oversees the 42-bedroom Seaton House.
Before joining Seaton House, Murdoch was part of the team launching the 140-cover steakhouse, the Coal Shed, in Brighton in October 2024. Throughout his career, he has held senior kitchen and hotel roles across the UK, Asia, and the Middle East, including at Trump Turnberry in Scotland.
He is also a recipient of the Royal Academy of Culinary Arts Award for Excellence.
Lee Murdoch will lead the hotel’s food and beverage operations, overseeing offerings at the Board Room, Bow Butts Bar, and Ondine Oyster & Grill.
